One Bowl Chocolate Cake

Today I made the One Bowl Chocolate Cake III on allrecipes.com.  I’ve made this cake a couple dozen times and it comes out perfect every time. It is definitely my go-to chocolate cake recipe, bookmarked on my phone and everything.   What I love about this cake is that you literally throw it all together in the bowl – no fuss – the most complicated thing is having to remember to boil a small saucepan of water…  And here’s that pic now – after I just poured the boiling water in and stirred it a bit. Be sure to incorporate the eggs 100% before adding the boiling water!! Scrambled eggs in my cake = bad. Lol.. Surprise!!! I always make this in my bundt pan, both because I love the way it bakes so evenly, and because I can slice it into little rounds for my kids to enjoy as afternoon snack.  I don’t frost or glaze, as we do prefer our sweets to be less sweet than most folks.  All sliced up, ready to go! …

Peach & Blueberry Upside Down Cake

I meant to publish this in November, but that’s okay! I’ll let you have it now 🙂 This is an upside down cake made with this recipe from allrecipes.com. It’s a super simple cake and I used frozen pre-sliced peaches and frozen blueberries – thawed mostly but not all the way. I made the “caramel” in the oven as directed and then just threw the fruit in the bottom of the pan. Gorgeous already!! I used a 10″ pan, even though it called for 9-9.5″ because I like a larger, thinner cake. It took about 45 min to cook I think because the fruit was frozen and recipe calls for fresh. But everything came out moist and delicious! It was perfectly cooked! I tried so hard to wait until the cake was fully cooked to turn it out… I’d leave the kitchen… Stall a bit.. Then go back in for a touch.. Yep still warm.. Finally I just went for it! I cut around the edges with a knife, put a plate over the whole …

Super Sweet Strawberry & Cherry Birthday Cake

My youngest daughter, Cecilia, celebrating her fifth birthday this weekend, asked me for a “vanilla cake, with strawberry frosting, with cherries on top”… And who am I to refuse?! Yellow cake is tough to make for me because it’s always come out dry in the past. I searched for a recipe that stated it was decidedly *not* dry, and I came across one called “David’s Yellow Cake,” – LINK HERE – and after reading through reviews, I thought it looked perfect! Okay, so I did make a couple of changes as some reviewers gave tips, but other than that I followed the methods to a T as I know it’s all in the name of moist cake.  Check out my room temp butter and sugar whipped up – YES I am holding this bowl up at a 90 degree angle!! Orange Pound Cake

Love her recipes Find this beautiful orange cake recipe here – LINK It was somewhat laborious to zest the oranges, but I enjoyed it since my husband told me his mother used to make this cake and he enjoys it. Of course that means it must be good! So below see some ingredients and my adding one egg at a time. No mixer here, so I’m growing biceps beating everything by hand 🙂 Stirred in the zest and it’s really beautiful.  Bundt pan instead of 2 loaves?? Yesssss!  I kept a careful eye on it – certainly didn’t want all that hard work to go to waste in an over cooked product!  Didn’t use glaze as husband watches his sugar and it is for him after all 🙂   And all sliced.. Bake Sale Chocolate Chip Cookies

I call these my “Bake Sale” cookies because they come out ginormous, extra thick, and super soft and chewy. Plus, they don’t have nuts, so everyone can enjoy! And enjoy they will.. These cookies are the best, both warm out of the oven and the next day. Store at room temp in a container after completely cooled.  Recipe: Sally’s Baking Addiction “Chewy Chocolate Chunk Cookies” I was a dare-devil today because I TRIPLED the recipe for end of school parties. Even though I only need 50, I’m hoping this makes 65 – you know… For the kids 🙂  UPDATE to add: I had to make 2 more batches to get 56 cookies bc the scoop is gigantic.. Worth it!! 🙂  Melt a TON of butter for the triple batch, mix sugar in, then fold in dry without beating it up too much, add chocolate chips (dark and semi-sweet) AND chunks – about 1.25 times what the recipe would call for, mix, chill 1 hr or so, use a HUGE ice cream scoop, bake 16 min …
