Peach & Blueberry Upside Down Cake

I meant to publish this in November, but that’s okay! I’ll let you have it now 🙂

This is an upside down cake made with this recipe from allrecipes.com. It’s a super simple cake and I used frozen pre-sliced peaches and frozen blueberries – thawed mostly but not all the way.

I made the “caramel” in the oven as directed and then just threw the fruit in the bottom of the pan.


Gorgeous already!! I used a 10″ pan, even though it called for 9-9.5″ because I like a larger, thinner cake.

It took about 45 min to cook I think because the fruit was frozen and recipe calls for fresh. But everything came out moist and delicious! It was perfectly cooked!


I tried so hard to wait until the cake was fully cooked to turn it out… I’d leave the kitchen… Stall a bit.. Then go back in for a touch.. Yep still warm.. Finally I just went for it! I cut around the edges with a knife, put a plate over the whole thing, and flipped! After a couple taps, I felt it loosen. I thought since it was warm the fruit would slide everywhere, but it didn’t. Perfect!

Just look at this beautiful cake. Perfect for a holiday dessert and you can use any fruit. I think I’ll try apples and walnuts next time! ❤️❤️❤️ enjoy ❤️❤️❤️ Do let me know if you make it!
